In math, students concentrate on skillssuch as using ratios, variables, equivalents and math management skills.In English they are learning menu writing, writing for newsletters andreading poetry and fiction that relates to culinary arts. The studentsparticipate in competitions with the National Ice Carving Associationand in ProStart competitions. "Last year our students won the National Knowledge BowlEvent," Heron says. "The Culinary Team came in ninth out of 24teams." While that was a good showing for their first year of competing inthe event, Heron notes, "This year our students took first, secondand third place in Knowledge Bowl at the state level, and first, secondand third place in the Culinary Team event at the state level." A team of their American Culinary Federation Established in 1929, the American Culinary Federation (ACF) is the largest professional chefs' organization in North America.ACF, which was the progeny of the combined visions of three chefs' associations in New York, comprises more than 18,000 members in 240 chapters students competedagainst college students in the Knowledge Bowl competition for ACF heldin March.
